Prepare the ingredients. Peel the garlic and keep the cloves whole. Slice the carrots and the pickles of the same size. Drain the olives and set aside.

Brine the Bangus!

Clean and cut the bangus according to the desired size. Rub the milkfish with salt and brine them in a container. Let it soak for 30 minutes.

Drain the fish and start to assemble them in the pressure cooker. Start with the bed of carrots, pickle, olives, garlic, thai chili, and whole peppercorns.

Continue the layer by alternating the bangus and the b=vegetables and spices. Once all done, place salt and fill the pressure cooker with olive oil enough to cover all the fish. Add one cup of water and tightly close. cook over high heat until it boils. When it boil, put the heat to low and cook for about 1 hour.
