The exact origin and history of Pork Caldereta are not well-documented, but it is widely believed to have Spanish influences due to the Spanish colonization of the Philippines for over 300 years. The dish is thought to have evolved from the Spanish dish “Caldereta,” which typically refers to a meat stew cooked with tomatoes, onions, garlic, and various spices.

During the Spanish colonial period, the Spanish introduced a variety of ingredients and cooking techniques to the Philippines. They brought with them tomatoes, which became a staple ingredient in many Filipino dishes, including Caldereta. The local adaptation of Caldereta incorporated native ingredients and flavors, resulting in a distinct Filipino version of the dish.

Originally, Caldereta in the Philippines was often made with goat meat (known as “Kalderetang Kambing”), reflecting the Spanish influence. However, over time, pork and other meats such as beef have become more commonly used due to availability and preference.

Pork Caldereta has become a popular and well-loved dish in the Philippines, enjoyed by Filipinos both at home and in restaurants. It is often served during special occasions, celebrations, and family gatherings. The dish has also evolved with regional variations, with different provinces and regions in the Philippines adding their own unique twists and ingredients to the recipe.

Today, Pork Caldereta continues to be a beloved dish that showcases the blending of Spanish and Filipino culinary influences. It represents the rich history and cultural exchange between Spain and the Philippines, making it a significant part of Filipino cuisine.
