Pork mechado Recipe is one of many Filipino recipes prepared with tomato sauce. In this mechado variant, I used pork, but this can also be replaced with beef. The advantage of pork meat though is that it’s much faster to cook than beef.

I left the pork in the marinade for this recipe for about 6 hours. It’s not necessary to leave it in the marinade that long, but I like meat to be marinaded for a long time so, the sauce will really soak into the pork. While preparing the Pork mechado recipe I noticed that I was out of Lime, commonly used for cooking this dish, so I used a lemon instead. In the Philippines this dish is commonly used with Calamansi, which are unavailable in the Netherlands. Nevertheless, the lemon also did the trick and made the dish taste the way I know it when I ate it in the Philippines.

Start by cutting the pork into small cubed and marinade it with the Soy Sauce and squeezed lemon. I stirred the meat every now and then while i left it in the ref for about 6 hours. (As I mentioned you don't have to leave it that long and it can be 20 min as well.

Put the cooking oil in a pan and add garlic and Onion. and wait until the Garlic is Golden brown and soft.

Add the marinaded pork to the mixture and make sure the pork is light brown. (Include the remaining marinade of the pork as well and not only the pork)

Next add the water and tomato paste, mix it well, lower the heat to minimum and simmer the mixture for about 50 mins until the meat is tender. Make sure you stir the mixture occasionally.

Add the potatoes and peas to the mixture and let it cook for about 15 min. Keep stirring the mixture and make sure the potatoes are cooked. If the water is too much evaporated at this step, then add some more water and let the mixture simmer again.

Now add the red and green bell pepper to the recipe and let it cook for another 5 min. You may add some salt or pepper to taste to the mixture so satisfies your taste.

Lastly place the pork mechado recipe on a serving plate and serve with white rice.

1 Piece Green Bell Pepper Cut in small cubes
1 Piece Red Bell Pepper Cut in small cubes
1 Big Potatoes Cubed
1 Piece Red Onion Chopped
6 cloves Garlic Minced
4 tbsp Cooking Oil
140 gr Tomato Paste
500 ml Water
1 cup Peas
to taste Salt
to taaste Black Pepper crushed
