Champorado – Chocolate Rice Pudding Recipe

Champorado Chocolate Rice Pudding RecipeChamporado is a sticky rice pudding combined with cocoa, sugar, vanilla and milk. It’s brown of color and commonly served during breakfast. Often a dried fish (tuyo) is added with this dish.

Ingredients for this Pudding:

  • 1 cup malangkit (sweet/sticky) rice
  • 2 1/2 cups water
  • 1/2 cup unsweetened cocoa
  • 1/2 cup sugar
  • 1/8 tsp. vanilla extract
  • sweetened condensed milk

Procedure to prepare this dessert:

Start cleaning the malangkit rice in a big saucepan and cook it with the 2.5 cups of water. Let the rice cook until it’s ready. The rice shouldn’t stick to the bottom of the saucepan. When it’s ready, add the sugar, cocoa and vanilla. Serve it on a nice plate or bowl and on top you can put the milk.

Green Mango Shake Recipe

Green Mango Shake RecipeA favorite among Filipino fruit shake lovers. One would love it for it’s tangy and real fruit taste. The green mango comes with a combination of a sweet and sour taste which make the shake amazingly great!

Ingredients for this shake:
1 Green mango
3 onz simple syrup
1 tsp non fat milk
3 onz Evaporated milk
1 1/2 cup ice cubes

Procedure to prepare this shake:
1. mix everything in a blender and process until ice cubes are crushed
2. Pour in a glass
3. rimmed the glass with fine salt to make it more interesting.

Beef Pochero Recipe

Pochero Beef Recipe Filipino DishPochero is a classic Filipino stew of Spanish origin. There are many versions of pochero in the Philippines which feature different kinds of meat and other ingredients like garbanzos (chick peas) and fried kamote (sweet potato)
Ingredients for this Beef Pochero dish are :
  • 500 gram of stewing beef (batok, preferably, but brisket will do too)
  • 1 piece of chorizo de bilbao,  sliced thinly
  • 3 tablespoons of olive oil
  • 1 tablespoon. of minced garlic
  • 2 onions, chopped
  • 4 tomatoes, chopped
  • 1 teaspoons of cracked black pepper
  • 1 bay leaf
  • 1/4 c. of tomato paste
  • 250 grams of carrots
  • 250 grams of potaoes
  • 150 grams of baguio beans, trimmed and cut into 2
  • 1/2 head of cabbage, cut in half
  • 6 pieces of saba bananas
  • salt
  • cooking oil for frying bananas
Preparation of the Beef Pochero Dish:

Peel the saba bananas. Cut each diagonally into 3 pieces and Fry in hot oil until golden brown. Drain the bananas  and put is aside. Cut the beef into small cubes. Then peel and cut the carrots and potatoes into small cubes. Heat a heavy casserole and pour in the olive oil. When its hot enough you can add the beef cubes. Cook the beef cubes until the it start to become brownish. When all the beef cubes are cooked you can add the garlic, onions, tomatoes, chorizo slices and bay leaf and you can also pour in the tomato paste with a cup of water. Season all ingredients with salt and pepper. Stir well and bring it to a boil.  Cover the wok and let it  simmer for approximately two hours or until the beef is tender. Add more water to avoid the mixture to dry up before the beef is cooked. Add the carrots to the sauce and let it simmer for about 3 minutes. Add the potatoes and simmer for another 3 minutes. Add the cabbage and green beans and simmer for 10 minutes.  Lastly, add the fried saba bananas and let it cook for another 3 minutes.

Ensaladang Pinoy – Green Salad

Green Salad Ensladang Salad Filipino RecipeA popular salad among Filipinos is Ensaladang Pinoy (green salad). It is a variation of the garden salad and comes instead of Olive oil with Fish Sauce. The Flavor of the Fish sauce is giving the dish a typical Asian taste.  It is an easy dish to prepare, doesn’t cost much and is easy to combine with other Filipino dishes on this website.

The ingredients needed for the Salad are listed below:

  • One cup of Malunggay leaves
  • One cup of kankong leaves
  • Two medium tomatoes (sliced)
  • One sliced cucumber
  • One  sliced small onion
  • One singkamas, cut julienne
  • A chopped Kinchay

The ingredients needed for the dressing are listed below:

  • ¼ cup of sugar
  • ¼ cup of vinegar
  • 1 tablespoon of fish sauce
  • ½ tablespoon of salt
  • ¼ tablespoon ground black pepper

Preparation of the salad dish:

Start by steaming the Kankong and malungay leaves and let them cool down after steaming them in the fridge. Place all the vegetables into a large salad bowl and use your hands to mix them. Combine the vegetables with the steamed leaves and place the dressing over the combination. Finally add the chopped kinchay and sliced egg on top before it is served.

Filipino Pinakbet – Pakbet Dish

Pinakbet or Pakbet Recipe a Typical Filipino DishPinakbet is a popular Filipino dish typically coming from Ilocano Philippines. Pinakbet or pakbet is a recipe made of Filipino vegetables and popular among vegetarian Filipinos. The unique flavor of ampalaya and bagoong (shrimp paste) and other vegetables make his dish surely a remarkable delicious dish.

To prepare Pinakbet or Pakbet you need the following ingredients:

  • One ampalaya (bitter melon), sliced
  • ½ lb sliced pork cut into small pieces
  • Two eggplants, sliced
  • One Onion, Diced.
  • Three Tomatoes, Chopped
  • One cup of water
  • Three pieces of garlic minced
  • Three table spoons of oil
  • Two cups of diced okra
  • Two cups of cut beans
  • Three tablespoons of bagoong alamang (salty shrimp paste)
  • One table spoon of ginger.
  • Salt and pepper to taste

First heat the oil in a pan and add the sliced pieces of pork until the color is brown. When this is done, remove the pork from the pan and place it aside. Use the same pan to stir the tomatoes, ginger, onions and garlic for several minutes until the tomatoes are wilted. Add the squashed okra and stir fry for a few minutes before adding the remaining vegetables. Add the water and add the bagoong and cook in till it boils. Adjust the heat and add the pork. Let the casserole simmer for about ten minutes but make sure it won’t be overcooked. Finally you can add some salt and pepper to bring it to a perfect taste. The pinakbet dish is done. The best way to serve the dish is hot and with plain rice.

Sago At Gulaman Drink

Filipino Drink - Sago At GulamanAll through the year filipino’s love to drink a lot, especially during the hot summers in the Philippines. A typical drink which can be found in many restaurants is Sago at Gulaman. Sago is a tapioca starch and Gulaman is jelly. The combination of these two main ingredients are not only the main ingredients for Sago at Gulaman but also other Filipino drinks. So in order to prepare Sago at Gulaman you need the following ingredients:

• One cup of sugar
• One bar of white gulaman soaked in water and drained
• Two cups cooked sago (tapioca pearls)
• Two cups water

Cooking instructions:

Start by caremelizing the sugar in a pan. When the sugar is melted (till its golden brown) add the two cups of water and continue cooking until the sugar is comletely dissolved. Let it cool off completely and add some of the syrup to the Sago so it will get a sweet taste. Put the Sago and Gulaman in a glass and add some more syrup to make it sweeter. Pour some crushed ice in a glass and fill the glas with ice cold water.

Giniling na Baboy (Ground Pork) Recipe

Giniling na Baboy (Ground Pork) RecipeA well known Filipino dish. Giniling can be made in many different ways and u can give your own touch to the dish. It is typically a sweet dish and inexpensive to make.

The ingredients needed for this recipe are:

  • 1 lb. ground pok
  • 2 tbsps. Olive oil
  • 2/3 garlic cloves, peeled and mashed
  • 1  red onion, chopped
  • 2 tbsps. fish sauce
  • 2 large tomatoes, seeded and diced
  • 3 tbsps. tomato paste
  • 1-2 tbsps. soy sauce
  • 1/2 c. water
  • 3 small potatoes, peeled and diced
  • 1 large carrot, peeled and diced
  • 1 green bell pepper, seeded and diced
  • 1  red bell pepper, , seeded and diced
  • 1/2 c.  peas
  • 1/4 c. raisins
  • salt and pepper

Heat the olive oil in a Wok or big pan. When the oil reached cooking temperature you can add the mashed garlic and let it fry until it’s medium brown. Add the chopped red onions and cook it till it’s transflucent. Once it is, you may add the ground beed and cook it till the pink of the meat if gone. For the taste you can add some fish sauce and let it fry for a few minutes so the meat can absorb the fish sauce. Next you can add the diced tomatoes and let it cook for approximately 2 minutes so the tomatoes will be soft enough to mash into the meat. After this step you can add the soya sauce  and tomato paste. Mix everything together and add the water. Add the diced potatoes and carrots which have to cook until it’s soft/tender. This may take quite a while but afterwards you can add the peas, raisins and the red and green bell pepers and let it cook for about 5 minutes. Finally add some salt and pepper to bring the taste to your needs.
