Filipino Chicken Macaroni Soup, also known as “Sopas” in the Philippines, is a popular comfort food that is often served during cold or rainy days. This dish is typically made with chicken, elbow macaroni, milk, and vegetables such as carrots and cabbage.

To make the soup, the chicken is first cooked in water until tender, then shredded and set aside. The elbow macaroni is then boiled separately until al dente and added to the chicken broth along with the shredded chicken, diced carrots, and chopped cabbage.

Once the vegetables are cooked, the milk is added to the soup, which gives it a creamy texture and adds richness to the dish. The soup is seasoned with salt and pepper, and sometimes with fish sauce or soy sauce, to taste. Some versions also include diced potatoes or evaporated milk for added creaminess.

Filipino Chicken Macaroni Soup is often served as a main course or as a snack, and it is usually garnished with chopped scallions and fried garlic for added flavor and texture. It is a popular dish among Filipino families, and it is often served during special occasions such as birthdays, holidays, and family gatherings.

In this chicken macaroni soup recipe, I shred the chicken instead of cutting it into small pieces, so the flavors and taste of the soup and chicken are really incorporated. Some chicken macaroni soup recipes around the web don’t use chicken breast, fillet, or chicken meat but other parts of the chicken. I haven’t tried those recipes yet because I’m quite font of the meat from the chicken. You can learn more about the various chicken parts right here
